Have you looked at uBar https://brawersoftware.com/products/ubar? I’m enjoying it for ability to be minimal, but looks like might have the option you are looking for. It is odd that the Apple Dock doesn’t have that option.

I looked at it after seeing you post about it before and something about it didn’t work for me. Perhaps I’ll give it another go.
